Most of it's cooked over fire.

Head chef and owner Sofika Boulton runs the kitchen. The bread is baked in-house every day and finished over the fire. Oysters, cured kangaroo, a kilo of beef T‑bone.

Sixteen cocktails, half of them on Republic of Fremantle spirits. The wine list is a booklet rather than a page: sparkling, white and orange, mostly Margaret River and the rest of WA, with France, Italy and Greece behind it.
